  • Bay leaves 2
  • Lean ground beef 1 lb
  • Diced tomatoes with juice 8 oz
  • Tomato paste 1/3 cup
  • Pimento-stuffed Spanish olives 1/3 cup plus 1 tbsp brine
  • Raisins 1/3 cup
  • Dried oregano 2 tsp
  • Ground cumin 2 tsp
  • Cayenne pepper 1/4 tsp optional

Remove the bay leaves before serving.

Heat oil in a large skillet over medium-high heat.

Saute onion, bell pepper, garlic, and bay leaves about 4 minutes until the onion softens.

Add ground beef and cook until browned.

Remove excess fat.

Add tomatoes, tomato paste, olives, brine, raisins, oregano, cumin, and cayenne.

Simmer over low heat about 8 minutes, stirring occasionally.
