  • Low-fat buttermilk 1 cup
  • Cooking oil 2 tbsp
  • Nonstick cooking spray As needed
  • Fruit, apple butter, applesauce, or light syrup For serving
  • Optional: Substitute half the all-purpose flour with whole-wheat flour. You can make buttermilk by adding 1 tbsp lemon juice or vinegar to 1 cup milk and letting it stand 5-10 minutes. Don't have buttermilk on hand? Use milk plus lemon juice, vinegar, or cream of tartar.

**Tip! – Whisk egg, buttermilk, and oil in a separate bowl.

Fun Fact: Add the wet ingredients to the dry ingredients and stir just until moistened.
